Food is meant to transport you to places, which is why Grain Guru collects recipes from all over to allow you to travel without leaving your home. A Thai inspired rice pudding dish, we’ve chosen to use black rice as it has a better texture and more nutrients; we're hoping to make the dessert a little less sinful! This is a vegan dish but an optional condensed milk can be added for those that are not.

Ingredients

  • 100g of cooked Grain Guru Black Rice
  • Coconut oil
  • 1 pinch of salt
  • 200ml coconut milk (tinned)
  • 30g brown sugar
  • 10g white sugar
  • Desiccated coconut
  • 1 ripe mango
  • Other fruits for seasoning
  • Toasted white sesame seeds 

Cooking instructions

  1. While the black rice is still hot, fold in the brown sugar
  2. Let the rice cool or fan cool if you are in a rush
  3. In a small sauce pot, heat up the coconut milk and dissolve the salt and white sugar
  4. Set aside to cool
  5. Oil your palms with coconut oil and shape the cooled black rice into balls and discs
  6. Assemble the rice pat and fruits on a plate and drizzle the cooled coconut milk sauce all over
  7. Garnish with desiccated coconut and toasted sesame seeds
