Glutenous black rice pudding is eaten throughout South East Asia, and you may have seen it under the dessert section at your local Thai restaurant. The secret is: it's traditionally served for breakfast - we think it is a fantastic idea so we would like to share this with you.
Our pudding mix is a combination of Glutenous black rice and Glutenous white rice for a fluffy and soft pudding texture. We'd recommend you cook a little more than needed and keep it in the fridge to eat over a few days to save time on breakfast preparations - just scoop it out and heat it up in the microwave. It's perfect for rushed mornings, and you can sweeten it with syrup, agave, coconut sugar or brown sugar. Top it with fruits or nuts, flood it with plant milk (we vouch for coconut milk or coconut cream) and kids will love it. It is low GI, vegan and gluten-free.

Black rice is an attractive & exotic-looking grain, so it's no surprise it was once exclusively eaten by Ancient Chinese emperors - that's why it's sometimes called the Forbidden Rice. Most commonly found in South, South East and East Asian cuisine, black rice is known for its blackish-purple pigment which is known as anthocyanin and is found in other dark plants such as aubergine, blackberries and purple corn. This compound is getting a lot of attention these days because of its high anti-oxidant properties that are both fat and water-soluble.
With an earthy aroma, it's chewy & nutty flavour makes it perfect for Thai Black rice pudding , Black rice risotto, Black and White rice stir-fry or Black rice paella.
