Here at Grain Guru we recently launched a range of new rice and grain mixes, and here's a deliciously easy recipe to go with our 5-Grain Mix. If this sounds familiar to you, it was one of the dishes we prepared live on stage at the expo, so we thought we'd give you the chance to make it for yourself!

This is a dish that's packed full of flavour and is fantastically easy to prepare. There's a rich sweetness with a hint of umami that really takes your palate on a trip, Here's everything you'll need:


  • Grain Guru 5-Grain Mix
  • 1 Eggplant
  • 1 Zucchini
  • Hot Szechuan fermented soy-bean Paste
  • 2 large garlic cloves
  • Rapeseed oil
  • Scallions and Coriander (optional garnish)

Cooking instructions

  1. Julienne the eggplant into finger size batons and shallow fry them in about a cup of rapeseed oil until golden brown.
  2. Once they're the right colour, take them out of the pan and place them on a paper towel on a plate to help remove any excess oil.
  3. Chop the two large cloves of garlic and place into another frying pan with a good glug of rapeseed oil. Start heating the pan.
  4. While the pan is heating up, julienne the zucchini just like you did with the eggplant.
  5. By now the pan should be nice and hot, so throw the zucchini in there and stir fry, adding a pinch of salt to bring out the flavour and help with the wilting.
  6. Add the fried eggplant and fry it all together until they're both wilted.
  7. Throw in two big tablespoons of the Hot Szechuan fermented soy-bean Paste (aka Do ban jiang) and stir it all together, ensuring that as much of the sauce gets on as much of the eggplant and zucchini as possible to fully maximise the flavour of the dish. 
  8. Drop the temperature of the hob and add a half teaspoon of soy sauce for some extra flavour.
  9. Plate up and optionally garnish with some freshly chopped raw scallions and coriander for extra colour and a bit of a crunch.
  10. Serve alongside Grain Guru 5-Grain Mix for a rich and filling meal that tastes amazing.
