There are many versions of fried rice, most of the time just frying the rice with some veg, but purists will want to try this egg-only recipe for a traditional “Gold and Silver Rice”. This is a fun and nutritious dish great for children’s dinners and meal prep. Decorate with carrots and peppers or just good, old tomato sauce.

Ingredients

  • 200g cooked Grain Guru Sushi Rice, cooked the night before
  • 3 egg yolks (use organic ones for the best colour)
  • Vegetable oil
  • Salt and white pepper
  • 1 minced garlic

Cooking instructions

  1. Wearing vinyl gloves (to keep your hands from turning gold!), gently work the egg yolk into the cold rice
  2. Make sure that every grain of rice is covered by egg
  3. Warm the pan, oil and minced garlic. Then add in the rice and gently fry the mixture, making sure that each grain is separated
  4. Add salt and white pepper to taste
  5. Garnish with seaweed or chopped spring onion
