This was inspired by an old Polish dessert where rice was boiled with cows milk and served as a porridge with stewed fruit or rhubarb, but we wanted to make it vegan friendly and lactose-free! It's hearty when eaten warm and can be a healthy pudding with lots of control over how much sugar goes in.

Ingredients

  • 200g Grain Guru Sushi Rice
  • 250ml coconut milk
  • 30ml of tinned coconut milk
  • 30g brown sugar
  • 1 red apple, diced
  • ¼ tsp ground cinnamon

Cooking instructions

  1. Wash the sushi rice thoroughly and let it soak in clean water for 30 minutes
  2. Strain the water out and add in the 250ml of coconut milk
  3. Boil the rice in the coconut milk for 5 minutes then turn the heat down low for a further 15 minutes
  4. When the rice is ready, scoop and pack it tightly into a round bowl
  5. Pour the thinned coconut milk over the rice and let it cool down
  6. In a small sauce pot, bring the brown sugar to the heat and melt it with a little warm water
  7. Add in the cinnamon and apple. Let it stew for 10 minutes
  8. Once the rice is cooled, flip it onto a plate and serve it with the apple syrup
