Here at Grain Guru we recently launched a range of new rice and grain mixes, and here's a deliciously easy breakfast dish you can make with our Black Rice Pudding Mix. We're such fans of this recipe, it was one of the dishes we prepared live on stage at the Plant Powered 2020 Expo in London, so we thought we'd give you the chance to make it for yourself!

Ingredients

  • Grain Guru Black Rice Pudding Mix
  • Plant-based milk (we prefer coconut milk or coconut cream, but any other variety works just as well)
  • Sweetener (syrup, agave, coconut sugar or brown sugar, or any other sweetener you like)
  • Dried fruit
You’ll notice that these ingredients are pretty vague. That’s the beauty of this dish; there’s so many ways you can chop and change it around you can adjust it to match your tastebuds perfectly and it’ll never get boring.

Cooking instructions

  1. Prepare the Grain Guru Black Rice Pudding Mix according to instructions. This can be done in the morning if you prefer a hot breakfast, or you can make it the evening before and keep it in the fridge for morning for a cold breakfast. It’ll keep in the fridge for up to three days, so you can plan ahead too!
  2. Take a big scoop of the rice mix and place it in a bowl. If you’ve got cold rice but prefer it hot, just pop it in the microwave with a splash of water until it’s piping throughout.
  3. Pour over your plant-based milk of choice - how much to put in is entirely up to you and what your tastebuds prefer.
  4. Top with some dried fruit (our favourite is a tropical mix with mango, coconut, banana, papaya and pineapple, we think it adds an extra level of variety to the flavour)
  5. Drizzle or sprinkle over your sweetener of choice
  6. Serve and eat straight away
