Toby's wild rice and veggies

 

Toby is 6 years old and he is the office/communal nephew. We’re watching him grow day by day. When Grain Guru first began, we tried a few recipes on him to see if they were truly child-friendly. The verdict is, if you want your children to eat healthy you should be eating well too. Once they are fully on solid foods, they should be eating everything you’re eating; just blander and less salt. No better way to start their whole eating history than with a good habit and an open mind towards food. Saves you cooking two meals too.

Here is Toby’s first purple rice experience.

 

Ingredients

  • 1 cup Grain Guru Purple rice; washed thoroughly and soaked overnight
  • Small bunch of fine, French beans
  • 1 handful of frozen petit pois
  • 1 red pepper, julienned
  • Ready-made falafels (vegan; gluten free)
  • Olive oil
  • ½ teaspoon of crushed garlic

 

Instructions

  1. Cook the wild rice in a pot as per the instructions. Let the rice steam for 10 minutes before opening the pot lid. Then fan the excess steam away while turning the rice over
  2. In a sauce pan of boiling water, add a generous pinch of salt
  3. Blanch the beans and peas for 2 minutes
  4. Pour the water out and add the crushed garlic
  5. Drizzle with olive oil and serve warm with a little sea salt
  6. Oil a frying pan and give the falafels a light toasting
  7. Peppers can be warmed up a little in the falafel pan but we think they taste pretty good raw

 

Adults can make themselves a garlic aioli, tzatziki or humus to add to the falafel. Most kids won’t need a dip before they plough into the food.
